I did not have a cookie cutter for a leprechaun or a rainbow and continue reading if you'd like to see how I improvised!! To start, I love all the rainbows sweetsugarbelle makes on her blog. They are perfect. I do not own a rainbow cookie cutter, but really wanted to make cookies like the ones she did here. I used her 20 second icing for the rainbow colors, but I don't think the consistency was perfect this time around. For best results I outline and flood must cookies. I keep trying to get the one consistency icing right, but it takes practice. I was doing so many colors I decided not to make two consistencies of each color. I used an idea from Lilaloa's post on how to make the leprechaun hats, I just added a little face. Leprechauns have always creeped me out, but I think this little guy looks pretty nice.

First, the rainbows...
Use circle cutters, or cups or bowls or whatever you can find to make a circle with a little circle inside of it.
Now remove the center and cut the circle shape in half with a dough cutter or a knife.
I learned this from sugarbelle, you can use a small flower cutter to make a cloud. Cut the small flower out first, then cut into the rainbow shape to make a spot for the flower. I sort of pressed the flower shape to make it more oval-shaped.

I chilled these shapes in the freezer for about 10 minutes before baking. I didn't want to loose this cute shape. After baking and cooling, the fun starts - decorating. I used a thick icing for each color and added them one at a time, waiting about twenty minutes before adding the last 4 colors. It's hard to take pictures while decorating! I used a small metal tool to smooth out the layers.

The next day I added the clouds by first outlining then filling in with white icing. I waited this long because I did not want the dyes to leak into the white frosting. I also added edible glitter while the white was still wet.

Use round cookie cutters, or a cup or whatever you can find to cut out the edges of the hat.
Here's a better photo, the order of cutting doesn't really matter.
I used the round cutters to cut out a small face for the leprechaun.
Decorate in alternating sections. Give each layer about 20 minutes to dry. I used sugarbelles 20 second icing on this one.
Continue adding the layers and when they are set add the details. I used wilton gold dust for the buckle and the gold coins. Isn't the alligator cute? I decided not to crop him out.

St. Patrick's Day Cookie Cupcakes



I was asked to make cupcakes for a picnic at the park and made these... two hours before the event I felt guilty so we threw something together... This cupcake cookie cutter is one of my all time favorites. I love using different shades of the same color. This are green for St. Patrick's Day. They look great in any color.

I always start by outlining and filling the bottom portion. While the icing is still wet I add drops to create the polka dots. When this has set (usually overnight) I outline and fill the white. When this portion has dried I outline the white again and add the nonpareils. (fancy word for those teeny tiny round sprinkles).

Hello Kitty St. Patrick's Day Cookies using the KopyKake 300XK Projector

I made these cookies using a design off of some Hello Kitty St. Patrick's Day cookies. If you haven't noticed I am a huge Sanrio fan. I think Sanrio is right up there with Disney. Someday I'll make all the characters on a cookie. I may be taking this cookie thing a bit far, but I ordered a KopyKake 300 XK to help make cookies. I was going to do a side by side cookie with and without the KopyKake, but I think the one without the projector wouldn't even be worth the sugar. So here's how I made them, I am no artist and almost feel like I'm cheating with this new monster of a tool.

Outline and Flood cookies - Using cheap Ziploc bags and a coupler

We were making so many cookies that we ran out of piping bags and tubes so we used really cheap ziploc bags with a coupler to outline and another bag with a small hole at the end to flood. This makes for a very easy clean-up and is helpful when you just need a little bit of flood icing. I let these dry overnight before adding Hello Kitty.

Here I'm using the kopykake to project the image on to the cookie. The lighting in the room was dim so it was fairly easy to see the image. It was a little difficult to get used to putting my hands off to the side so I didn't block the image being projected from above.

All the images are outlined, and I'll let them dry for about 15 minutes

Fill with thinner flood icing

To finish, I filled the image with icing and allowed the icing to dry for about 1 hour, just to be safe and to take a breather from the cookies. My sister-in-law Rayanne said this step looked like advanced coloring. It was probably my favorite step, just adding the color to each section. It felt like that dump tool on most paint programs. I didn't take a picture of the last step, but I put the cookie back under the kopykake and added details - eyes, bows, clovers, etc.

The clovers seemed so easy to complete after completing the characters. These were so much fun to decorate!
